Banana-Berry Chocolate Pudding

Want a great alternative to store bought Chocolate Pudding that is HEALTHY for you?  
This is great!
I made three batches of this to take to a small get together in our neighborhood and it was a hit! 

BANANA-BERRY CHOCOLATE PUDDING! 
I originally got the recipe from Hybrid Rasta Mama
then made a few adjustments to it. 


Chocolate/Banana Berry Avocado Pudding
Ingredients:
1/2 banana
½ cup to ¾ cup Blueberries
1 teaspoon fresh lemon juice
1Tablespoon  filtered water
½ to a full ripe avocado
¼ Cup of Raw Honey or Coconut Nectar (I use Coconut Nectar due to Low Glycemic Value)  
¼ Cup of raw Cacao Powder
1 teaspoon of organic vanilla extract

Place Banana & Blueberries, lemon juice with the flat blade and 1 Tblsp of water into a food processor or blend with immersion blender.   Pulse, until you have a banana-berry puree…add a little more water if  you need it.  

Put rest of ingredients in your food processor.
 Pulse until all ingredients are combined and pudding like.  

Spoon about 4 Tablespoons into individual little cups and chill.  This will fill about 3 little cups.   This is important so you don’t eat the whole thing in one sitting. Plus, it is a very rich treat. You can top it with some nuts or some blueberries for presentation. 

You can also put it in little cups with popsicle sticks and make healthy pudding pops!  Great for a cold treat.

This is a healthy alternative to popsicles that have sugar..or pudding that has sugar in it.   Trust me, you will enjoy it!
